At CoCo we want everyone to feel welcome & just a little bit special while enjoying lunch, dinner, or simply a drink and a quick bite before a movie.

CoCo’s Head Chef Nic Spicer creates exquisite dishes inspired from flavours around the globe, using the freshest of New Zealand ingredients.    Prior to joining CoCo in 2011, Nic trained with celebrity chef John Torode (presenter of UK’s Masterchef) in London. He was also Sous Chef at award winning Wellington restaurant Matterhorn, when it won Cuisine Magazine Restaurant of the Year 2008, then Head Chef at Café Polo in Miramar.

CoCo’s Bartender Ray Letoa is one of New Zealand’s Best Bartenders, but he’ll never admit that.  Ray specialises in everything crazy with our cocktails. He’s been known to make the most aesthetic cocktails ever seen in New Zealand, being classically trained by some of the country’s best, including ‘The McKenzie Brothers (Justin & Jonny)’ and Mr Ben Simpson.

It’s undeniable when Ray Letoa enters the room with his eccentric outfits he is noticed, further to that you can more or less hear him before you see him.  Ray Letoa is determined to establish the Roxy Bar as one of ‘New Zealand’s Top Five Cocktail Bars’ and already he’s made a good start with a raft of accolades in 2014 and continues to impress as the Wild Card and National Finalist of World Class for two years in a row. 2015 marked Ray coming an impressive 2nd in World Class and nabbing the People’s Choice Award, making him one of the most recognized and respected bartenders in the country.

About CoCo The original building began life in 1928 as The Capitol Theatre. It was eventually converted into a shopping complex in the sixties, then was empty for several years. Opened in 2011 after extensive renovations, the building has received accolades and won awards for its authentic Art Deco design and striking sculptures and artworks created by Weta Workshop. CoCo’s/The Roxy Cinema’s owners hail from both the film and hospitality worlds: Oscar award winning Jamie Selkirk and Ann Selkirk; Tania Rodger and Sir Richard Taylor of Weta Workshop; and former Café Polo owners Valentina and Daminda Dias. Valentina works alongside Nic as they share their inspiration for the ongoing development of the CoCo menus.
